Broken Out Chicken and Rice Bake - chicken, cheddar, bacon, Ranch and rice - brisk and simple weeknight goulash! Use rotisserie chicken and this meets up in 5 minutes! SO great! We make this in any event once per week!!

I've been on a rice goulash kick of late. We've made a few adaptations of it and adored them all. I was looking intensive my formulas and understood that I didn't have a "Broke Out" Chicken and Rice Bake rendition. OMG! I needed to cure that circumstance ASAP!

This was SO great. That is to say, genuinely scrumptious! It may be my most loved Chicken and Rice Bake on the blog. We had this for supper and had scraps for the following day for lunch. It was incredible the multiple times. Utilize some rotisserie chicken (my weeknight mystery weapon), and this goulash is prepared for the broiler in 5 minutes. Serve this with some speedy green beans and you have a simple weeknight feast in less than 30 minutes!

Quick and easy weeknight casserole! Use rotisserie chicken and this comes together in 5 minutes! SO good! We make this at least once a week!!


  • 2 cups water
  • 2 cups instant white rice
  • 12-oz cooked, chopped chicken (about 2 cups)
  • 1 can (10-3/4 ounce) Cream of Chicken Soup
  • 8-oz sour cream
  • 1/2 (1-oz) package dry Ranch Dressing Mix
  • 1 cup shredded cheddar cheese
  • 1/4 cup cooked, chopped bacon
  • 1/2 cup chicken broth or water


  1. Preheat oven to 350ºF. Spray a 9x13-inch pan with cooking spray. Set aside.
  2. In a medium saucepan, bring water to a boil. Add instant rice, cover and turn off heat. Allow to stand for 5 minutes, until all water is absorbed.
  3. In a large bowl, combine chicken, chicken soup, sour cream, Ranch dressing mix, cheddar cheese, bacon, chicken broth and cooked rice. Spread into prepared pan.
  4. Bake for 20-25 minutes, until cheese is melted and bubbly.
